Looks like agar agar to me! :-) You could look for molds such as these and make agar agar, popsicles and if you get cookie cutters, Aaron can have food shaped like this! So fun!
I'm sure, as 'out of the loop' shopping-wise as I usually am, I'm a day late and a dollar short with this info, but as I understand it, there are all kinds of specialty ice trays available that mold your ice into all kinds of shapes, characters and forms. Now, the defrost factor does take some of the fun out of it, but not for foods like Jello or homemade popsicles! I have great memories of homemade popsicles (using the regular ice trays) made with fabulous Koolaid/juice concoctions using toothpicks for the sticks.
